These smaller farms are not able to compete with some of the larger growers and Co-ops, due to the high costs of certification and licensing charged by most governments. 				<content:encoded><![CDATA[<p>There have been numerous studies and articles posted that explain the health benefits of cocoa, so many people have some level of awareness of cocoa’s health properties.  This article summarizes the more significant health benefits attributed to cocoa and how to select the right types of cocoa products to ensure you receive the maximum health benefits possible.</p>
<p>One study conducted by the Harvard School of Public Health has found that antioxidant-rich cocoa products may improve blood pressure and boost levels of good cholesterol (HDL cholesterol). This study found that consumption of flavonoid-rich cocoa was associated with an average decrease in systolic blood pressure of about 1.6 mmHg. It has been reported that a mere 2 mmHg decrease in systolic blood pressure could lead to 6% fewer stroke-related deaths, a 4% lower rate of heart disease deaths and a 3% reduction in overall deaths among Americans.</p>
<p>According to another finding that appeared in the <i>Journal of Nutrition</i>, scientists report a significant increase in levels of HDL cholesterol (also known as “good” cholesterol) following consumption of antioxidant-rich cocoa.  The health benefits of polyphenols from cocoa have been reported to provide potential benefits for cardiovascular health, skin health, and even brain health.  Another study has found that consumption of cocoa had significant positive effects on hypertension.</p>

// ]]&gt;</script>The majority of science into the potential benefits of cocoa have revolved around cardiovascular benefits of the flavanols (also known as flavan-3-ols or catechins), and particularly the monomeric flavanol (-)epicatechin. Research has shown that in addition to the blood pressure and HDL improvements, flavonoid-rich cocoa consumption was associated with a decrease in measure of insulin resistance.  Insulin resistance occurs when insufficient insulin is released to produce a normal glucose response from fat, muscle and liver cells.  These findings indicate that cocoa may help treat and reduce prevailing symptoms that precede diabetes.</p>
<p>Much of the heart health benefits of cocoa come from the natural plant flavanols, which are naturally high in antioxidants. Antioxidants reduce the harmful effects of free radicals, which cause damage to the skin cells and other cells in the body, and have been attributed to pre-mature aging.</p>

Cocoa&#8217;s concentration was two to three times stronger than that of green tea and four to five times stronger than that of black tea.</p>
<p>2. Professor Chang Yong Lee, the leader of the Cornell study, added that the &#8220;hot&#8221; in &#8220;hot chocolate&#8221; is important as well. More antioxidants are released when it&#8217;s heated up.</p>
<p>3. A cup of hot cocoa contains 611 milligrams of the phenolic compound gallic acid equivalents (GAE) and 564 milligrams of the flavonoid epicatechin equivalents (ECE). The antioxidant gallic acid is used to treat internal hemorrhages, albuminuria (the presence of albumin in the urine, which can indicate kidney disease) and diabetes.</p>
<p>4. Although a regular bar of chocolate has strong antioxidant activity, the health benefits may be outweighed because of the saturated fats present — cocoa generally has much less fat per serving compared to the 8 grams of fat in a standard chocolate bar.</p>
<p>5. The <a href="http://www.mnn.com/food/healthy-eating/stories/what-is-a-flavonoid">flavonoids</a> help your body process nitric oxide, which is why hot cocoa can improve blood flow, help lower your blood pressure and improve heart health.</p>
<p>6. The flavonoids in hot chocolate also help prevent platelets in your blood from mingling together and forming clots.</p>
<p>7. According to the American Association for the Advancement of Science, drinking hot chocolate can help you <a href="http://www.mnn.com/food/healthy-eating/stories/new-study-eating-chocolate-linked-to-the-nobel">think better</a> too. The flavonoids increase the blood flow and oxygen to the brain. Since dementia is caused by a reduced flow of blood to the brain, researchers think it could be treated with cocoa.</p>
<p>The most important thing to note is not all cocoa has been created equal!  To ensure you receive the maximum health benefits contained in natural cocoa beans, try to consume cocoa products that are as close to the natural bean as possible.  This means you should look for minimally processed cocoa beans.  Avoid cocoa that has been “Dutch Processed”  which means the cocoa has been treated with alkali.  Also avoid cocoa that has a lot of added ingredients such as sugar, corn syrup, hydrogenated or partially hydrogenated oils, gelatin, artificial flavors, sodium, artificial colors and other unnatural ingredients.</p>
